Turkey Breast with Taralli Crumbles

4 slices of turkey breast
2-3 eggs
200 g of crumbled taralli
Extra virgin olive oil sufficient quantity 
Salt  & Pepper to taste.

The breaded meat is an evergreen dish, loved  by children but also perfect for a quick lunch. 
The turkey gives lightness to this second, while  with the  taralli crumbles it becomes very crunchy  and inviting.

Lightly beat the turkey slices and coarsely chop the taralli, by hand or with a mixer, then transfer them to a flat plate. 
Break the eggs by dividing the yolks from the whites.
Pour the latter in a deep dish with a pinch of salt and pepper and beat them lightly with a fork.
Dip the slices of meat in the egg whites, drain them and pass them in the chopped taralli, 
pressing with your fingers to make it  stick well (do it  one slice at a time).
Heat 5 tablespoons of oil in a non-stick pan, lay the turkey slices and fry them on both sides.
Once cooked, drain the excess oil on kitchen paper and serve on the table.
NB: Heat the oil well before putting the meat in the pan, so that the bread remains very crispy.

If you want to make another  version you can add 4 thin slices of Fontina cheese or another cheese 
place each one on a piece of turkey for the last 2 minutes of cooking, so that it melts. 
Add 1 slice of cooked ham for the "Valdostana" version.
